Tacos, burritos and chimichangas…oh my!

It's probably safe to say that Cinco de Mayo is my favorite of the holidays closely associated to food or dining. Thanksgiving food is a little limiting; I like Saint Patrick's Day dinners but Irish food isn't often my first choice when I go out to eat.

But Mexican food is so great. Guacamole makes such a great addition to any meal or snack. Fish tacos, chimichangas, burritos, nachos and enchiladas are among my favorites.
