    Sift Bake Shop to open second location, in Watch Hill

    Westerly — Come late April, fans of Sift Bake Shop will have not one but two places to satisfy their cravings for croissants or ciabatta, French macarons or mousse, scones or sandwiches.

    The Mystic establishment, founded in May of 2016, is opening a shop at 102 Bay St. in Watch Hill.

    The location is a natural fit for co-owner and head pastry chef Adam Young, who previously worked as executive pastry chef at the Ocean House, which is a 0.3-mile walk from the new Sift location.

    "Watch Hill was kind of the obvious choice for our next location," Young said, "and the reason being is I already have a pretty substantial reputation and standing in this particular area, and this is the type of demographic that we like."

    Young explained that he loves "balanced demographics" of both tourists and locals.

    He is hoping to have a soft opening around April 20 and an official opening the following weekend.

    Subject to change, the new location is planned as a seasonal shop that will be open seven days a week from April until at least Columbus Day, and then on weekends to the holidays.

    The storefront of the Watch Hill location will be larger than its Mystic counterpart, though the new locale will not have a kitchen. Young said the pastries sold in Watch Hill will be made daily in Mystic and brought over multiple times a day.

    He expects the new location to bump up the staff of Sift Bake Shop from 32 to 48.

    The Watch Hill shop is the former location of Capizzano Olive Oils & Vinegars, now located at 5 Coggswell St. in Pawcatuck.
