    BellaVitano Balsamic cheese is a winner

    I am a Man of Cheese. Many of you have probably believed that about me, in the context of intellectual appraisal, for many years. But I'm speaking literally. Cheese = Life + Enjoyment. Copernicus originally theorized that. Cardiologists fervently believe it — and proselytize about it at every check-up or stress test. So, yes. I am a Man of Cheese. And while I can't afford any Pule — a rare Serbian cheese that goes for almost $600 a pound (if indeed you can find it) — I will enthusiastically shell out about $10 a pound for Sartori's BellaVitano Balsamic Cheese. We find it at BJ's in Waterford. It slices thin and brittle, with a creamy, Parmesan-y flavor infused with a few drops of tart Balsamic. Believe it or not, placed atop a standard Saltine, the result is sublime.
