And while I can't afford any Pule — a rare Serbian cheese that goes for almost $600 a pound (if indeed you can find it) — I will enthusiastically shell out about $10 a pound for Sartori's BellaVitano Balsamic Cheese. We find it at BJ's in Waterford. It slices thin and brittle, with a creamy, Parmesan-y flavor infused with a few drops of tart Balsamic. Believe it or not, placed atop a standard Saltine, the result is sublime.
