    New restaurant planned for former Pizzetta space in Mystic

    Mystic ― A new restaurant plans to open early this spring in the former Pizzetta space at 7 Water St. in downtown Mystic.

    COAST provisions + tipples restaurant will serve “locally sourced, approachable, and innovative New American cuisine with touches of New England seafood,” according to a news release. The restaurant will feature food with local ingredients, craft cocktails and wine.

    Moses Laboy and his wife Lauren Wells, who have a “combined 40 years in hospitality,” will open the restaurant, according to the announcement.

    “Drawing inspiration from their roots in New York City and their deep family connection to Mystic, they aim to bring a unique blend of flavors and experiences to the community,” the release states.

    “Our vision is to create a sophisticated yet relaxed, family-friendly environment, offering a delightful experience for all,” Laboy said in a statement.

    Laboy said by phone Thursday that he and his wife lived in Brooklyn, N.Y., for a long time and then moved to Westchester when their 7-year-old daughter was born, and the family frequents Mystic on holidays and on weekends in the summer. He said his mother-in-law is an artist and art teacher in Mystic, and his wife’s family has lived in Mystic for the past 40 years or so.

    Laboy said the plan is for a dining room and a bar offering craft cocktails on the street level and then a speakeasy-style bar with more classic cocktails on the lower level. There also will be outdoor seating on the river side, and additional seating on the front porch and back porch.

    “I really feel like there’s going to be a little something for everyone in the space,” he said.

    According to his biography, Laboy, who was born in New York and is fluent in English and Spanish, is the corporate beverage director for Gerber Group, whose portfolio includes Mr. Purple, The Campbell, The Crown and Daphne in New York City. He is a Level 2 Sommelier from The Court of Master Sommeliers and has been recognized with Wine Spectator awards. Timeout NY named him a top mixologist in New York City, and Simon Difford and Peter Heering LTD. named him a top mixologist in 2018 during London Cocktail Week.

    He also has consulted chefs, appeared on “Chopped” on the Food Network and as a beverage expert consultant on the “Bar Rescue” television series, the biography states.

    Pizzetta announced in a Facebook post earlier this month that it was closing and thanked its customers for their support.

    “We cannot thank you enough for the love and support you have continued to show over the years,” the pizza restaurant said in the post. “While encouraging you to keep the Pizzetta energy alive, focusing on the positive memories and telling stories of the good times that were had by all, we hope that you look forward to the future, and the exciting changes that are to come.”
