New London board approves proposal by cheese company

New London — The Planning and Zoning Commission on Thursday approved a special use permit to allow the Mystic Cheese Company to open a cheese making operation in a portion of a warehouse at 75 Crystal Ave.

Plans submitted by Mystic Cheese Company founder Brian Civitello also call for a liquor permit to allow the business to serve local wine and beer at a tasting room.

Civitello said he also envisions cheese-making classes as an educational component.

The company, which sells their cheese wholesale, is based at Graywall Farm in Lebanon, one of the founding members of the Farmer’s Cow.

The Planning and Zoning Commission next month is expected to take up an application by O’Reilly Automotive Stores, Inc. to construct an auto parts store at 413 Colman St., the site of a former Nextel/Sprint store.

Plans include demolition of the existing building located on property adjacent to the former Edgerton School.
