    OLIVE OIL CAKE

    1 1/4 cups all-purpose flour

    1/4 teaspoon baking soda

    1/4 teaspoon baking powder

    1 cup sugar

    2 eggs

    1/2 cup olive oil

    3/4 cup buttermilk

Zest of 2 oranges, finely chopped

Powdered sugar or orange marmalade for finishing

Preheat the oven to 350 degrees F. Grease and flour an 8-inch round cake pan. Mix together all ingredients except for the marmalade/powdered sugar. Pour into the prepared cake pan and bake, 35 minutes or until toothpick comes out clean. Let the cake cool, dust with powdered sugar or top with marmalade and serve.
