    How to prepare the Lemon Basil Haddock from Sneekers Cafe

    Sneekers' Lemon Basil Haddock

    The folks who produced the "Cheers" TV show lucked into a songwriter who came up with the catchy "Where everybody knows your name" theme song hook — which in turn had the unfortunate effect of making it seem as though no other pub or tavern in the world had or has regulars and an all-embracing staff.

    Well, Sneekers Cafe in Groton has a similar and possibly better vibe because it's NOT a television show and, as such, their innate friendliness is genuine and not subject to script rewrites. Plus, Sneekers doesn't have Frasier Crane to drop by and pompously discuss the direct link between Rene Descartes and biopsychology (all while lecherously ogling Diane).

    Another excellent thing Sneekers DOES have is a surprisingly robust and diverse menu that goes beyond bar-food staples like their excellent burgers/chicken fingers. Consider, for example, their Lemon Basil Haddock. If you brought this dish out and served it at a high dollar casino restaurant, it'd be perfectly successful. But you don't have to do that. You can order it in the friendly confines of Sneekers! Or, because Sneekers co-owner Rhonda Dempsey was kind enough to share the recipe, you can now make the Lemon Basil Haddock in your own kitchen.   

    Lemon Basil Haddock

    Ingredients

    2 pounds of haddock

    1 cup of panko (Japanese bread crumbs)

    Lemon pepper seasoning, to taste

    ¼ cup of butter

    2 teaspoons lemon juice

    2 teaspoons fresh basil

    ½ cup mayonnaise

    Directions

    Preheat oven to 350.

    Cut fish into 4-6 serving pieces.

    Place in a greased 11x7 inch baking dish.

    Make aioli by add lemon juice and fresh basil to the mayo.

    Add lemon pepper seasoning to panko, then add butter and toss.

    Spread the aioli on the fish and top with the panko crumbs.

    Bake until the fish starts to flake, 20-25 minutes.
