Yoko Loko food truck opening brick-and-mortar restaurant
Ledyard — The taco and hibachi food truck Yoko Loko, usually found at Kartway on Route 12 on Saturdays, announced it is opening a brick-and-mortar location at 1598 Route 12 in Gales Ferry.
"Because of you all, even through these times of uncertainty and adversity, along with the sacrifices we've made from the start up until now — you helped us pull through as a small, family operated business with a dream/vision that goes beyond with just owning a purple food truck," Yoko Loko posted on Facebook on Thursday.
Owner John Filipinas told The Day on Friday he's not sure when it will be open but he'll be posting about his progress on the building, and ideally the restaurant will be open in the fall.
The restaurant also will be called Yoko Loko, and he's hoping to add more Filipino dishes to the menu.
This will be his third year running the food truck, and Filipinas said he wanted to expand into a physical location because of how well the business was doing, and that he'd find himself running out of food and space with the truck.
